Golden Self Blanching Celery is a variety of celery with yellow-green stalks. It is an heirloom variety that has been popular in the US since the late 1800s. The stalks can grow up to 2 feet tall and are thick, stocky, smooth, and have virtually no strings. This celery is also disease resistant and pollinator friendly.
 
Blanching celery produces a sweeter celery stalk that is more in keeping with what you're used to buying in the grocery store. Unblanched celery is much stronger in flavor and often bitter (and definitely darker green).
