Merlin is a hybrid beet that has an exceptional eating quality and attractive dark green, glossy tops. A wonderfully uniform beet with round 3–4 inch red roots. Merlin really stands out in the flavor department due to its high sugar content. Harvest at any stage of maturity; either as babies or fully sized up, because these beets hold their flavor and don’t get woody or tough. Excellent for roasting, Beet salads, main dishes, or pickled beets.
